Family Pizza Night and the Almighty Chicago Deep Dish (with a Family Pizza Pack Giveaway!)

Making pizza at home with our family is one of our favorite things to do, and Friday nights set the perfect tone for a party.  The best homemade pizzas include–yep, you got it–Wisconsin Cheese.

For this pizza party, we invited our friends Vinny and Wylie to join us because they are the experts of pizza–Vinny’s family used to run a pizzeria in Brooklyn–and because, well, we like them. I set my standards high for this pizza. I wanted to attempt the Chicago deep dish, something I’ve never done from scratch. I grew up taking the Amtrak into Chicago and never visited without hitting up either Giordano’s, Gino’s or Uno’s.

It was time we recreated this cheesy wonder of the world in our own home.

Deep Dish is serious business though, and you don’t approach it lightly. Our friend Vinny knows pizza like the back of his hand, but he’s an Italian New York boy, so I gave him what he’s good at–sauce, cheese and toppings–and I took over the responsibility of the Chicago deep dish crust. I researched that mother like I was writing a thesis on it, and the recipe I chose turned out to be nothing short of perfection. I followed Sally’s Baking Addiction deep dish crust recipe to a T which uses flour, salt, sugar, yeast, warm water, butter and cornmeal. The secret of a deep dish crust which resembles a pie crust more than a pizza crust is three things: cornmeal, sugar (it’s a little sweeter than regular pizza dough) and laminating butter into the dough.

So I pre-made the deep dish dough, set the table for company and then watched as my friends arrived and took over our kitchen LIKE A BOSS. Friday night just got real.

The dough recipe I followed rolled out beautifully to make two deep dish pizzas. We lined the bottom of two 9-inch tall cake pans, lightly oiled, with the dough and brushed it with an olive oil mixture with fresh garlic and Italian spices.

You can add whatever toppings you’d like to a deep dish pizza. We sauteed red peppers, cooked sausage and added pepperoni.

I thought a good homemade pizza sauce would be pretty complicated but was pleasantly surprised to see how easy it was. Vinny says you don’t need to add much to a good can of crushed tomatoes and not only that you can add it right to the can; don’t dirty another dish. He also says don’t cook pizza sauce because the tomatoes will taste old if you double cook them. We topped off a can of crushed tomatoes with fresh basil and oregano, a heaping tablespoon of sugar (I like a sweeter sauce for deep sauce), a swig of olive oil, and salt and pepper. Stir together and that’s it!

The other secret of deep dish pizza is you reverse the toppings–do not pour sauce directly on crust. It’s CHEESE FIRST. I’m sure Wisconsin Cheese would agree with this life motto–cheese first.

And finally sauce.

Repeat those layers, fold in the dough that overlaps the pan and then shave some fresh Wisconsin Parmesan on the top. Bake at 500° for around 40 minutes depending on your oven, but keep checking until crust looks golden, cheese is fully melted and consistency is to your liking. Important: let it set for at least 10 minutes.

We made some regular dough for the kids so they could make their own mini pizzas, have fun with the dough and watch Vinny throw it in the air.

And ours? Sweet Mother of Melted Cheese. Best pizza ever. Even Vinny–the king of pizza–was raving, taking pictures of it, texting it to family.

And now comes Brett’s favorite part. He used to work in a pizza parlor when he was in his 20’s and for years has been raving about the cool pizza cutter he used to use that stretched across the entire diameter of the pizza–talked about it so much that my mom finally found one and gave it to him for Christmas last year. He loves every opportunity to whip it out.

    Wisconsin cheese is amazing! We have Friday pizza and movie nights. We make our dough in bulk and freeze it. Pull it out on Friday mornings and have homemade pizza in 30 minutes. Amazing and fun!

    Yuuuuuuuum. I love pizza so much. I’m a pepperoni kind of girl, but my absolute favorite is one that a local pizza place that closed down used to make. It had alfredo sauce, mozzarella, pepperoni, green peppers, and banana peppers.

    My favorite pizza is a style that can only be found locally (as in, my town). It’s called the ‘tavern’; it’s thickness is somewhere between a regular and deep dish, and it has marinara and american cheese on it (among other cheeses I think). It is THE BEST pizza outside of NYC (we’re Upstaters) 😉 and we own it. Although emulated, never duplicated!

    Some of my friends are “pizza purists” and only enjoy standard cheese and pepperoni for their toppings but I will put anything on pizza.

    Pineapple and ham are my favorite but anchovies come in at a close second. I wish more people would give poor old anchovies a chance, they make an amazing topping!

    I love NY style pizza, which is easy to find living in the south. Also, if you are in Binghamton, NY, you need to try Cortese Pizza. Lately, I have been craving any pizza as long as I can dip it into blue cheese.

    I’ve got to say one of my favorite pizzas comes from a local pizza place in my area- it’s Thai-inspired- fresh cucumbers, curry chicken and sweet red chili sauce are some of the delicious ingredients!

    My favorite pizza is olive oil with garlic on the crust (no sauce), artichoke hearts and brie cheese …. we have ‘make your own pizza nights’ often and that is MY go to. The kids stick with traditional red sauce, pepperoni and cheese, some leave out the pepperoni 🙂
    I will have to try this dough recipe, sounds like heaven .. and Uno’s I love Uno’s!!

    My husband is originally from the Latrobe area in Pennsylvania. Every time we go to visit his Grandma we have to stop a little pizza place called Joijoi’s. It’s his all time favorite pizza and it’s square with a sweeter crust, yummy!

    My kids (6,4 and 1) love making pizza! We probably have it at least twice a month. We use the America’s Test Kitchen recipe for New York thin crust and it’s delicious. I love your idea of mixing the sauce in the can. Totally going to try that next time!

    My favorite pizza is homemade pizza – thin crust. Toppings very each time depending on our mood. Close second is Spinnocoli pizza from Pizzeria Uno on State Street in Madison, WI (but alas we haven’t been in WI in about 20 years). I’ve had Spinnocoli Pizza at other Uno’s but they don’t live up to the Spinnocoli Pizza eaten on State Street.

    I love all pizza! I’ve seen recipes to make a deep dish in a cast iron skillet, but this looks even more amazing… like an actual pizza pie! My favorite is super thin, crispy crust with lots of mushrooms and olives on top.

    My mom recently passed and while going through her belongings yesterday, my siblings and I found her old deep dish pizza pan. It’s older than I am and we all have the best memories of her making us this AMAZING pizza. Even after my older siblings left the house, we would still come together with their spouses and children for pizza nights. Amid all of the sadness yesterday, we stopped to just talk and laugh about all of those good memories with that pan and the hundreds of pizzas it held.

    Afterwards, we decided to have ‘joint custody’ of the pan and pass it between the three of us. We’re even planning to start up those pizza nights again, with all three of our families coming together. It’s amazing how something so simple as a pan and a pizza has made us feel so much better during this time.

    And thank you for sharing your night (and the giveaway). It makes me happy to think of other families making such wonderful memories.

    I tend to be so simple with my pizzas; I prefer a thick crust, sauce, and cheese … you just can’t beat that unless it is double cheese! A local place used to serve pizza that included ricotta on it and that was my obsession for years but it’s not a common topping option at a lot of places, oddly enough. If you have the chance, try it.

    After trying Chicago deep dish over a decade ago, I decided THAT was the way to eat pizza. But then just this spring my husband and I were in NYC for our 15th anniversary and WOW! The New York style slice at Majestic Pizza was phenomenal. I can’t choose! 🙂 However, I would say my favorite toppings are either a veggie pizza or bacon and onion. 🙂

    Also, that has to be some of the best homemade pizza I’ve ever seen. None of my homemade pizzas come out looking nearly that good… in fact they usually look pretty disastrous (but they always taste alright)!

    I’ve never tried deep dish but let me tell you when I try the other kind and roll it out (especially my Blue Apron meals that have pizza), its quite comical. The two of us stretch the dough out in the rectangular pan and I take wooden clothespins and pin the dough to the pan rim all around so I can at least get the toppings on. Then I take the pins off and throw it in the oven as quickly as I can.

    I love deep dish pizza. I found the trick of corn meal years ago and it makes the best pizza. I used the recipe that came with my bread maker (french bread), then added the corn meal at the end.
    It was so good and filling. My kids nicked named it “heartburn pizza”. Thier seal approval.
